Frittata di cipolle - Onion omelette

Ingredients for 6 people:

5-6 medium sized onions
6 whole eggs
soft bread soaked in milk
oil, butter
a handful of grated Parmesean

 

Chop the onions finely and brown them well.

Break the eggs into a bowl and beat them with a fork.

Add the onions.

Squeeze the milk from the bread, break it up and add to the egg mixture with grated Parmesan. Mix well.

Pour the mixture into the frying pan, add a sprinkle of salt, and cook in the usual way, turning halfway through cooking.

Serve hot.
